Makes 2 x cereal bowls full

Ingredients

  • 1 cup courgettes, peeled and chopped
  • 1/4 cup lemon juice
  • 2 TBSP good olive oil
  • 2 to 3 cloves garlic
  • 1 tsp atlantic or celtic sea salt
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • pinch cayenne pepper
  • 1/2 cup tahini
  • 2 tsp parsley, fine chopped / minced
  • garnish - pine nuts, paprika, olive oil

Method

  1. Blend courgette, LJ, oil, garlic, spices til smooth.

  2. Add tahini and blend again

  3. Pour into a bowl and stir in parsley

  4. Garnish with a few pine nuts, a sprinkle of paprika, and a drizzle of olive oil

  5. Chill for 2 hours to firm up

Keeps about 3 days , covered in the fridge
Great source of calcium and B vitamins from the tahini - 2 tablespoons of tahini is 35% of RDA for calcium
